VARIETY: 100% Cabernet Sauvignon

REGION: Margaret River

OAK MATURATION: Small percentage barrel aged to add complexity and depth to the palate. 

PALATE: Bright red fruit, freshly roasted coffee and elegantly interwoven cedar tones introduce a focused, mineral palate rife with aromas of glazed cherries, vanilla pod and subtle French oak toast. The finish is persistent and elegant, boasting ripe coating tannins and a fresh blueberry afterthought.

WINEMAKING: Picked as cold as possible and gently crushed to assist in the cold soak before fermentation. Fermentation is carried out in small temperature controlled open fermenters. Gentle extraction was achieved by daily draining of wines from the skins and returning back over. After two weeks in the oak fermenters, the wine was pressed to French oak Barriques and stainless steel tanks to complete the primary and malolactic ferment. 

14.4% Alcohol
